Avocado Salad with Pine Nuts
2 tablespoons raisins
1 lime
1 Avocado
1/2 Peperoni
2 Anchovy filets
1 tablespoons Aceto Balsamico
salt and pepper to taste
3 tablespoons Poppy oil
2 tablespoons Pine nuts
Wash raisins in warm water until tender.
Meanwhile, halve avocado,
remove stone and carefully take pulp from peel.
Cut Avocado in strips
and sprinkle with lime juice.
Wash Peperoni and remove seeds.
Dice
Peperoni and Anchovy files and mix with Avocado stripes.
Combine Aceto
Balsamico with salt and pepper adding Poppy oil (carefully).
Mix very
well.
Pour marinade over Salad.
Roast Pine nuts in a pan (without fat)
until golden yellow and add to Salad.
Before serving add raisins and
mix everything very well.
